Chicken Alfredo Biscuit Casserole



I love to cook and bake from scratch but I have no problem whatsoever with getting some help now and then, whether it's a boxed cake mix, or a package of cookie mix, or refrigerated pie crusts, or refrigerated biscuits, etc.  Honestly, sometimes I'm just not in the mood to spend time mixing and measuring and if there's a quicker way to get supper on the table, I'll take it. 

I found this dish on the Pillsbury website, a website I visit frequently as I have had great luck with their recipes.  I have quite a few of their recipes bookmarked and am starting to make my way through them.


I've had this recipe saved for ages and am so glad I finally made it.  It's absolutely delicious.  It's creamy and comforting, perfect for fall, and it was a hit - everyone loved it. 

This was a fast, easy weeknight meal that I'll be making again and again.

Chicken Alfredo Biscuit Casserole
Printer-Friendly Version

1 T butter
2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 jar (16 oz) Alfredo pasta sauce
1/4 cup milk
2 cups chopped cooked chicken
2 cups frozen broccoli florets, thawed
1/4 teaspoon dried basil leaves
1 can (7.5 oz) Pillsbury® refrigerated buttermilk biscuits
1 T butter, melted
1 T grated Parmesan cheese


Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. 
 
In 10-inch nonstick skillet, melt 1 tablespoon butter over medium heat.  Cook mushrooms and onion in butter, stirring occasionally, about 5 minutes or until tender.  Stir in Alfredo sauce, milk, chicken, broccoli and basil.  Cook until mixture is thoroughly heated and bubbly, stirring constantly.  Spoon into baking dish.
 
Separate dough into 10 biscuits.  Cut each biscuit in half crosswise.  Arrange around edge of baking dish, overlapping slightly.  Drizzle biscuits with melted butter; sprinkle with Parmesan cheese.
 
Bake 15 to 20 minutes or until biscuits are golden brown.
 
Makes 5 servings.

  3. I know what you mean. Sometimes making everything from scratch seems overwhelming. I use shortcuts sometimes. They make life so easy. I have made several of Pillsbury's and they were all great. i am sure this one follows the same rule. Very goodlooking and comforting dish.

  5. I couldn't agree with you more. I remember when there was NO shortcuts; at this point when I feel like it I use them. My husband would go for this casserole. Haven't been to the Pillsbury site in a while; gotta go.

  9. This looks so good, Brenda - great comfort food. We all need shortcuts from time to time, and this one looks really delicious! Wish I could get the refrigerated buttermilk biscuits in England - we only get the croissant rolls!

  13. This looks really good. I don't mind taking a little short-cut once a while myself, if it means saving on precious time! I don't think that I have seen any Pillsbury Refrigerated Buttermilk Biscuits sold over here, but then again, I don't have a reason for it before! Now, you have really brought this to my attention!   14. Tina, no I'm sorry I can't be of any help with blogs that combine novels and food. I hadn't heard of Cook the Books so just headed over there now to check it out. My friend, Debbie at http://thefridayfriends.blogspot.com/ has a blog that combines reading and cooking, you might find something there or a link from her blog. I'm an avid reader myself, not food books necessarily, but all kinds of novels. It's my favourite way to spend time when I'm not in the kitchen. Good luck! :o)

  29. What a wonderful comfort food. I love the Pillsbury recipes too. I have it saved on my favorites. If I didn't know this was with the Pillsbursy biscuits, I would think that you made them, Brenda. So yummy!...and BTW thanks for your kind comment on my carrot cake recipe. The only tedious work on it (actually messy) is the grating of the carrots...other than that, the recipe is so easy!

  33. Brenda, I love the look of this (great photos), and with chicken & broccoli in it I know my partner would love it. So often he'll ask me what we're having for dinner, and I might say something like "Zucchini and Pea Pasta with a Ricotta Sauce", and he will say something like "so, will that have broccoli in it?" or "is that the kind of thing that has chicken in it?" The long and the short of it is that I could get him to at least try just about anything if I put chicken or broccoli in it. So I know he'd love this. Only problem is we don't have refrigerated biscuits here (actually we call them scones here - to us, biscuits are cookies), but if I was a really nice girlfriend I could make my own "biscuits" and put them on top.
